SOUR CUCUMBER

INGREDIENTS
- Cucumber 625g
- Salt 1 tsp
- Red Pepper (sliced) ½ cup
- Sweet and Sour Ginger (sliced) ½ cup
- Royles White Sesame (stir-fried) 1 tbsp.

SEASONING
- Pun Chun White Vinegar 1 cup
- Water 1 cup
- Sugar 1½ cup
- Salt ½ tsp

INSTRUCTIONS
1. Bring the seasoning to boil, cool down.

2. Trim the cucumber, keep the skin on, remove the seed, slice into four parts with 6cm long.

3. Soak in the boiled seasoning for 4 hours.

4. Arrange cucumber on plate, sprinke with sliced ginger, red pepper, fried white sesame and sesame oil.
