SWEET CHILI, CORN AND ZUCCHINI FRITTERS

INGREDIENTS
- HAC Canned Whole Kernel Corn 425 g
- Zucchini (medium) 2
- Eggs 2
- Flour ½ cup
- Baking powder 1 tsp
- Milk ½ cup
- Lee Kum Kee Sesame Oil 1 tsp
- Royles Oil 2 tbsp
- Lee Kum Kee Thai Sweet Chili Sauce 3 tbsp
DIPPING SAUCE
- Lee Kum Kee Thai Sweet Chili Sauce ¼ cup

INSTRUCTIONS
1. Drain corn. Trim zucchini and grate coarsely. Mix corn, zucchini, flour, baking powder, eggs, milk and Lee Kum Kee Thai Sweet Chili Sauce together until batter is smooth.
2. Mix oils together and heat in a heavy-based frying pan. Cook quarter cupsful of corn mixture in hot oi until golden and cooked on both sides.
3. Cut cucumber in half and remove seeds. Cut flesh into 1 cm cubes. Mix with Lee Kum Kee Thai Sweet Chili Sauce and serve with corn and zucchini cakes.
